Cinco de Mayo

Cinco de Mayo celebrates Mexican heritage and pride. This Crunchy Beef Tostadas Sandwich with Pico de Gallo will have its own party in your mouth.

Crunchy Beef Tostadas Sandwich

6 Tortillas
1 can Refried beans
1 pound Ground beef
1 Tablespoon Taco Seasoning
Avocado, chopped
Pico de gallo
Mexican shredded cheese
Sour cream

Brown ground beef with Taco Seasoning; drain. Crisp tortilla in oil for about 15 seconds per side. Layer tortilla, beans, beef, avocado, pico de gallo, cheese and sour cream. Repeat. Top with pico de gallo. Yield: 2 servings

Pico de Gallo

1 1/2 pounds tomato, chopped and seeded
1 small onion, chopped
1/2 cup chopped fresh cilantro leaves
3 Tablespoons lime juice
Serrano chiles or jalapenos (the amount depends on your level of "hotness")
Pinch salt and black pepper


Add all the ingredients to a medium bowl and toss to combine. Cover and chill until ready to serve.

*This salsa can be made 4 hours ahead.
